About the wine

Nascetta, an ancient native Piedmontese grape sometimes called “the white Nebbiolo”. Brought back from the edge of extinction, this rare variety bursts with acacia blossom, white peach, apricot and herbs, carried by salty, mineral acidity. Made without oak, it is a distinctive Piedmont white that speaks purely of its terroir.

Tasting notes
NoseWhite fruit, Apricot, Aromatic herbs (with time)
PalateEnveloping and fresh, with a touch of acidity.
FinishPleasant persistence with a savoury, saline note.
Winemaking
VinificationHarvested into small 20 kg crates and brought straight to the cellar. If needed the grapes are cooled to 12–15°C, then whole-bunch pressed without destemming, so as not to damage the stems, and only the free-run juice is kept. After 24–36 hours of settling to separate the lees, alcoholic fermentation starts at 16°C and usually lasts three weeks or more.
AgeingRacked 8–10 days after fermentation ends and aged on the fine lees until early the following spring, before preparation for bottling.
VineyardSerralunga d’Alba, about 300 m, south and south-east facing; clay rich in calcareous marl.
