About the wine

Paiagallo, the single-vineyard cru of Mirafiore, Italy’s royal Barolo, in the commune of Barolo. Plum, tobacco leaf, rose, cinnamon and dried mushroom, with rich yet elegant vanilla and spice from French oak. Its tannins are softer and more approachable than those of Serralunga Barolo.

Tasting notes
NoseRipe plum, Tobacco, Mint, Rosemary, Cinnamon, Dried mushroom
PalateVery dense, close-knit tannins give structure, together with softness and balance.
Winemaking
VinificationDestemmed and crushed grapes are warmed to 32–33°C, with frequent pump-overs during the first three days. As alcohol rises, the temperature is lowered to about 25°C to avoid excessive tannin extraction. Délestage is carried out during 20–30 days of maceration, and malolactic fermentation follows straight after alcoholic fermentation in tanks at about 20°C.
AgeingTwo years in Allier oak casks (2,000–14,000 L), fined if necessary and bottled; released after at least one year in bottle.
VineyardLa Villa, in the village of Barolo, 320–370 m, east and south-east facing.
