About the wine

A distinctive sparkling wine from Ca’ dei Zago, a small family winery in Valdobbiadene, made by the traditional method with a second fermentation in bottle. Dosaggio Zero: no sugar is added, for a pure expression of terroir. Delicate jasmine, peach, yellow apple and pear, with minerality and lively bubbles leading to an elegant, pure finish.

Winemaking
VinificationPart of the Glera is fermented on its skins. After the second fermentation in bottle, the wine is disgorged and topped up with the same wine instead of a sugar dosage (dosaggio zero); the crown cap is replaced with a cork at disgorgement.
AgeingDisgorged after 16 months of second fermentation in bottle.
VineyardBastia di Saccol: about 300 m above sea level, 0.86 ha, south facing, clay-limestone soils over sandstone marl. Old Glera clones; production was around 350 cases.
