About the wine

Ca’ dei Zago’s signature wine, made the traditional “Col Fondo” way — re-fermented in bottle and left to age on its lees without disgorging. Slightly cloudy, with vibrant lime, mandarin peel, green apple and lemon-drop fruit and a clear minerality. The unique texture and freshness created by living yeast and fruit are the very charm of natural wine.

Tasting notes
PalateTaut and linear, floral, fresh, with a crisp minerality.
Winemaking
VinificationPrimary fermentation with wild yeasts in stainless steel and cement tanks. After resting over winter, the wine is bottled in spring with a little sugar and yeast and re-ferments in bottle to create its bubbles. The lees (fondo) are not removed; filtration and sulphites are kept to a minimum.
AgeingBottled in the spring after harvest and re-fermented in bottle.
VineyardSan Pietro di Barbozza; non-calcareous clay and sandy soils with a high flint content.
