About the wine
Not the sweet, jammy kind of Primitivo, but a dry, balanced Salento Primitivo in the manner of Sangiovese. Ripe berries, truffle, raspberry and musk with a hint of spice. Velvety smooth, it is lighter, drier and fresher than typical Primitivo, which makes it superb with food.
Winemaking
Vinification10 days of skin maceration with frequent punch-downs; malolactic fermentation in barrique.
Ageing4 months in Nevers and Tronçais oak barriques.
VineyardSalento, 90 m above sea level; clay; spurred cordon; 5,000 vines/ha; 15–20-year-old vines; harvested in the first ten days of September.
